Best Loaf Pan by Material: Glass, Stoneware, Steel or Cast Iron

For most bread, a light-colored metal pan is the safe choice. Glass bakes slower, stoneware varies by clay, and cast iron is heavy. If you want to avoid PTFE, either buy an uncoated pan or check the coated one by item number in the maker's chemical filing. Every maker also sets its own rules for heat, the broiler and the freezer, and we put those side by side.

Which Loaf Pan Material Is Best?

Short answer: light-colored metal, if browning matters most. King Arthur Baking calls a light-colored pan “made from a metal that's an efficient heat conductor” the ideal vessel in most cases, and calls glass pans “insulators” (King Arthur Baking). King Arthur calls stoneware the wild card, because the clay varies from pan to pan.

The bigger difference is in the rules. Here is what each maker says about the things that break or spoil a pan:

Pan Oven and broiler Freezer, dishwasher, tools
USA Pan (aluminized steel) 450°F max; the warranty excludes “grill or broiler use” No dishwasher, no soaking; silicone, nylon or wood tools
OXO (borosilicate glass) Preheat first; no broiler or stovetop Freezer to a preheated oven up to 450°F; dishwasher safe; no scouring pads
Pyrex (tempered glass) Preheat first; no broiler or stovetop Not straight from freezer to a hot oven
Le Creuset (stoneware) 500°F max; broiler with a 2½ inch gap; no stovetop Frozen dish goes into a cold oven; dishwasher safe
Lodge (cast iron) Not for the stovetop; no oven limit on the pan's page Hand wash, no soaking, dry and oil
TeamFar (stainless) 500°F, per the Amazon listing Dishwasher safe, per the listing; no maker page found

Non-Toxic Loaf Pans: Is Nonstick Safe?

Short answer: it depends on the coating, and the Amazon listing may not name it. Bon Appétit says the nonstick loaf pans it recommends “all employ either ceramic or silicone coatings”, and that some brands use PTFE (Bon Appétit). The quickest check is the maker's California AB 1200 page, where cookware makers post the chemical disclosures California requires. USA Pan's lists PTFE for one loaf pan and not for another (details below). Glass, stoneware, cast iron and plain stainless avoid the coating question.

We compared 40 brands' filings in what cookware brands list in their chemical disclosures. For sheet pans and full sets, see our non-toxic bakeware guide and best bakeware sets.

Aluminized Steel Loaf Pans (USA Pan)

USA Pan says the 1-pound pan is “Material: Aluminized Steel” with a “nonstick silicone coating”. Its FAQ describes that coating, Americoat, as “a natural non-stick and non-toxic silicone that is PTFE, PFOA, PFOS, PFAS and BPA free” (USA Pan, USA Pan FAQ).

The heat limit protects the coating: “Do not exceed 450º F because it could compromise the silicone coating.” USA Pan also says “We do not recommend cooking sprays as they may stain your bakeware.” USA Pan says to grease or flour only as your recipe directs, and to wash the pan by hand: “Do not place in dishwasher.”

Check the model number. USA Pan's California filing (AB 1200) lists aluminum, iron, manganese, and vanadium and compounds for the standard 1-pound pan, item 1140LF. The same filing lists PTFE for a sibling, the 1140LF-AP “Allergy ID Loaf” (USA Pan AB 1200 page). Different item, different filing, so read the item number before you buy. If aluminum itself worries you, our aluminum cookware guide covers what health agencies say.

USA Pan 1 pound aluminized steel loaf pan with a ridged bottom

Best overall

USA Pan Nonstick Standard Bread Loaf Pan, 1 Pound (1140LF)

USA Pan says its bakeware “conducts heat efficiently, so you may need to reduce cooking time or temperature as needed.” USA Pan lists the baking surface as 8.5 x 4.5 x 2.75 inches and files it as a “Small Loaf Pan - 1 lb. vol.”

Good for: sandwich bread, banana bread, pound cake

The drawback: no dishwasher, no soaking, and “Use only silicone, nylon or wooden utensils.” USA Pan's warranty excludes “normal wear and tear” such as discoloration and staining.

Glass Loaf Pans (OXO and Pyrex)

Short answer: glass works, but it bakes slower than metal. For glass pans in general (its examples are brownies and pound cake), King Arthur Baking says “The standard advice for baking in glass is to lower the oven temperature by 25°F from what the recipe calls for”, and to allow up to 10 minutes more (King Arthur Baking).

Glass makers do not all use the same glass. OXO's glass bakeware care guide says its borosilicate dishes “can go from a 0°F (-18°C) freezer to a pre-heated 450°F (232°C) oven without shattering” (OXO glass use and care). Pyrex says its Easy Grab loaf pan is “Durable high-quality tempered glass”, and its safety page says “DO NOT transfer directly from freezer to hot oven.” (Pyrex, Pyrex safety and usage). Pyrex's FAQ says the company makes both soda-lime and borosilicate glass (Pyrex FAQ).

Both say to preheat and to keep glass away from the broiler and stovetop. OXO: “ALWAYS preheat the oven before use.” and “Keep away from direct flame, including broiler, stovetop, grills or toaster ovens.” Pyrex: “DO preheat oven before inserting glassware or ceramicware.” and “AVOID sudden temperature changes, to avoid the risk of breakage.” OXO also says to set hot glass on a trivet, dry potholder or dishcloth, and to let it cool before it goes in the sink.

OXO clear glass loaf baking dish with a gray lid

Best glass

OXO Good Grips Glass 1.6 Qt Loaf Baking Dish with Lid

A 1.6-quart borosilicate dish with a lid, so a meatloaf or quick bread can be baked, covered and stored in the same dish. OXO's care guide says “All Bakeware dishes are dishwasher safe; lids are top-rack dishwasher safe.”

Good for: meatloaf, quick breads, and leftovers that go back in the fridge

The drawback: OXO's instructions say “NEVER use lids in the oven or microwave.” Bon Appétit's testers wrote that both test loaves stuck and that cleanup involved soaking and scrubbing; they thought it would be great for meatloaf or casseroles instead. OXO's Better Guarantee page says it “does not apply to” bakeware.

Stoneware and Ceramic Loaf Pans (Le Creuset)

Le Creuset's stoneware care page is specific: “The maximum oven-safe temperature is 500°F / 260°C.”, “DO NOT use any Stoneware piece on the stovetop or any other direct heat source.”, and under a broiler “allow a gap of no less than 2 ½ inches between the rim of the dish and the heat source.” For frozen food: “Do not place a frozen dish of food in a preheated oven.” Le Creuset says to start it in a cold oven instead (Le Creuset stoneware care).

What the chemical filing says. Le Creuset's disclosure entries are per product and color. The entry we found for the Heritage loaf dish in Sea Salt lists “Cobalt nickel gray periclase” under all chemicals and “n/a” under food contact (Le Creuset disclosure, Sea Salt). We did not find the entry for the red Cerise pan we link, so if pigments matter to you, look up your color on Le Creuset's disclosure search first (Le Creuset disclosures).

Le Creuset red stoneware loaf pan with scalloped handles

Best stoneware

Le Creuset Stoneware Heritage Loaf Pan, 9 x 5 x 3 in (1.5 qt)

Glazed stoneware that goes from oven to table. Le Creuset says its stoneware “is safe for use in the microwave, freezer, refrigerator, dishwasher, oven and broiler” and that the enameled surface is “easy to clean and scratch-resistant.”

Good for: serving, casseroles for two, pound cake

The drawback: it has far fewer Amazon reviews than our other picks, and Le Creuset's warranty excludes “damage from overheating”.

Cast Iron Loaf Pans (Lodge)

Lodge says the pan is “Seasoned with 100% natural vegetable oil” and “Nontoxic cookware made without PFAS”. It also says the loaf pan is “Not intended for stovetop use” (Lodge).

The Amazon listing says the pan is made “with only iron and oil”. Lodge's own California filing for seasoned cast iron, which covers bakeware, also lists phosphorus, manganese and strontium among the chemicals (Lodge California disclosure). The filing's seasoning row is soybean oil. Care is simple but strict: “Soap is totally okay!”, but “Soaking cast iron in water is a recipe for rust.” (Lodge cleaning guide). More in our cast iron pros and cons.

Lodge black seasoned cast iron loaf pan with side handles

Best cast iron

Lodge Seasoned Cast Iron Loaf Pan, 8.5 x 4.5 in (BW8LP)

Bare iron with seasoning, and Lodge's promise: “if your seasoned cast iron or carbon steel cracks or warps, we'll replace it.” (Lodge Promise)

Good for: cornbread, dense yeast loaves, meatloaf with a crust

The drawback: it is heavy (Lodge lists 3.68 lb), it needs drying and oiling after every wash, and Lodge says “Rust, pitting, roughness, sticky seasoning, flaking, and odors are not covered under warranty.” The pan's own page gives no oven limit.

Stainless Steel Loaf Pans

Uncoated stainless answers the coating question in one word. The TeamFar pan's listing says it is “constructed with well made stainless steel without aluminum or any toxic coating”, made in one piece, and dishwasher safe. Our PFAS-free parchment guide compares papers if you plan to line the pan.

TeamFar brushed stainless steel loaf pan

Best uncoated

TeamFar Stainless Steel Loaf Pan, 9 1/4 x 5 in

A one-piece 9 1/4 x 5 inch pan. The listing gives the inside as “9" x 4.7"” with a “2.5 - inch deep side”.

Good for: people who want no coating of any kind

The drawback: the listing never names the steel grade (such as 18/8 or 18/0), and we found no TeamFar care page or chemical filing. Everything we know comes from the Amazon listing.

Silicone Loaf Pans

They are not the best at browning. Bon Appétit's testers wrote that “100 percent silicone pans aren't the best at browning” and suggested avoiding them (Bon Appétit). If you still want one, our is silicone safe for cooking? guide covers what the research says about silicone bakeware.

Loaf Pan Sizes: 8.5 x 4.5 vs 9 x 5

Short answer: 8.5 x 4.5 inches is the usual 1-pound size, per Bon Appétit and USA Pan, and 9 x 5 is the other common size. Bon Appétit notes that 9 x 5 pans are sometimes sold as “1 pound” too, and that taller, narrower pans give a higher rise, while wider pans suit quick breads (Bon Appétit).

Pan Size the maker gives Sold as
USA Pan 1140LF 8.5 x 4.5 x 2.75 in baking surface 1 lb
Le Creuset Heritage 9 x 5 x 3 in (Amazon listing) 1.5 qt
TeamFar 9 1/4 x 5 in outside, 9 x 4.7 in inside 9 1/4 in
USA Pan Pullman 1170PM 9 x 4 x 4 in baking surface with cover

Compare inside measurements. USA Pan says “Our measurement dimensions are calculated by the baking surface of the pan” (USA Pan FAQ), and TeamFar gives both inside and outside sizes, so two pans sold as 9 x 5 can hold different amounts.

Pullman Loaf Pans and Loaf Pans with Lids

A Pullman pan has a cover that holds the dough down, so the loaf bakes square for sandwiches. USA Pan says the pan bakes square loaves with the cover on and a rounded top with it off (USA Pan Pullman).

USA Pan Pullman loaf pan with its sliding cover

Best with a lid

USA Pan Pullman Loaf Pan with Cover, 9 x 4 x 4 in (1170PM)

Same aluminized steel and Americoat coating as our quick pick, with a sliding cover. USA Pan's filing lists the same four metals for it.

Good for: sandwich bread, shokupan, toast

The drawback: same rules as the open pan: 450°F max, “cooking spray is not recommended”, and no dishwasher. USA Pan's page gives two different outside sizes for it.

How We Chose

On October 20 and 21, 2026, we read the Amazon listing for each pan we link (with a U.S. delivery address), then each maker's own product page, care guide, warranty and California chemical filing where one exists. We picked one pan per material, using Amazon's loaf pan best sellers and the pans named in Google's search results and by Bon Appétit. Le Creuset's care quotes come from its Hong Kong site, because its U.S. care page did not load for us, and OXO's come from its general glass bakeware care guide. We did not bake in these pans ourselves.

Questions People Ask

Can you bake bread in a glass loaf pan?

Yes. Preheat the oven, never use the broiler, and expect a slower bake. King Arthur Baking's general advice for glass pans is to lower the oven by 25°F and bake up to 10 minutes longer. Pyrex says not to move its glass straight from the freezer to a hot oven.

Is a glass or metal loaf pan better?

Metal, for most bread. King Arthur Baking calls glass pans insulators, and Bon Appétit found glass can leave a loaf overcooked outside and underdone inside.

What is the healthiest loaf pan material?

Uncoated glass, stoneware, cast iron and stainless steel have no nonstick coating to wear. For a coated pan, read the maker's chemical filing by item number: USA Pan's standard 1-pound pan lists no PTFE, while its Allergy ID loaf pan does.

What is the best loaf pan for banana bread?

Any 8.5 x 4.5 or 9 x 5 pan works. Bon Appétit says wider pans are fine for quick breads like banana bread. In glass, King Arthur Baking suggests baking 25°F lower and up to 10 minutes longer.

Can you put parchment paper in a loaf pan?

What is the best pan for sandwich bread?

A tall, narrow pan. Bon Appétit says taller, narrower pans give a higher rise and suit sandwich bread. For flat-topped slices, a Pullman pan with its cover on bakes a square loaf, per USA Pan.

What is the best meatloaf pan?

Bon Appétit suggested the OXO glass dish for meatloaf, and its lid lets you store the leftovers in the same pan. Le Creuset's Amazon page calls its stoneware pan “Ideal for everything from breads to meatloaf, pound cake and more”.

Is a loaf pan the same as a bread pan?

Yes. Bread pan and loaf pan are two names for the same deep rectangular pan, and Amazon files both under Bread & Loaf Pans. A Pullman pan is a loaf pan with a sliding lid.

How do you measure a loaf pan?

Use inside measurements. USA Pan says its sizes are calculated from the baking surface, not the outside of the pan, and TeamFar gives inside and outside sizes separately, so two pans sold under the same size can differ.

The short version

Bake mostly bread? Get a light aluminized steel pan and check the coating by item number. Want to store and reheat in the same dish? Glass. Want no coating at all? Cast iron or stainless.
