Ceramic or Steel? The Best Pepper Mills, and the Salt Rule That Voids a Peugeot Warranty

The short answer

For most kitchens, the best pepper grinder is a manual mill with an adjustable ceramic mechanism, a body you can see through and a top that grinds without leaving a ring of pepper on the shelf. Pick a steel mechanism only if the mill will hold pepper and nothing else. Pick electric if you want one hand free at the stove. And keep water away from the grinding parts: Peugeot, Cole & Mason and Home EC all say so.

What actually touches your pepper: ceramic, steel or plastic

The grinding mechanism inside the mill touches every peppercorn. It decides whether the mill can take salt and how you clean it.

Ceramic

Ceramic is the most common choice in this list. OXO calls its mechanism non-corrosive and says it won't absorb flavors or odors. Kuhn Rikon says its ceramic stone is not subject to rusting. That is why ceramic mills are the ones sold for salt as well as pepper: salt rusts metal, and ceramic does not rust.

What ceramic does not mean: it is not a safety label. No maker here claims a ceramic mill is "non-toxic" and a steel one is not. Ceramic simply stands up to salt better.

Stainless steel

Peugeot builds its pepper mills around steel. The u'Select listing says its treated stainless steel gears are designed specifically for pepper: they crack each peppercorn first, then grind it. Peugeot also makes salt mills with a stainless steel mechanism, but its FAQ limits them to dry rock salt. Sea salt, dry or wet, should not go through a steel salt mechanism; for that, Peugeot uses ceramic.

Carbon steel

Cole & Mason uses a carbon steel mechanism in its Derwent pepper mill and says it strips peppercorns before crushing them. Its matching salt mill gets a ceramic mechanism instead, which Cole & Mason says resists corrosion. The rule follows from that: never put salt in a carbon steel pepper mill.

Plastic

Some very cheap grinders, often sold in multipacks, use plastic grinding parts. We found no maker saying that is unsafe, but their listings rarely say what the grinding part is made of, so we left them out.

Peugeot Paris u'Select wooden pepper mill in dark chocolate beech wood

Steel pick

Peugeot Paris u'Select 9-inch Pepper Mill

Good for: pepper only, ground for years, at the grind you choose.

Why we picked it: Peugeot says its treated stainless steel gears crack each peppercorn, then grind it, and its pepper mechanisms are guaranteed for life. The u'Select ring locks in six preset grinds, so you get the same size every time.

What to know: The body is beech wood from PEFC-certified forests. Peugeot asks for dry, hard, whole peppercorns no bigger than 1/4 inch (6 mm). Pink peppercorns are fine only as up to 15% of a blend; more than that is outside the warranty.

The drawback: it grinds pepper and nothing else, so salt needs a second mill. Peugeot says never to wash it in the sink or the dishwasher. And the top comes off for every refill.

Grind consistency: fine to coarse, clicks or a dial

A good mill gives you the same grind on the twentieth turn as on the first. How you set that grind comes in two styles.

  • Preset clicks. The Peugeot u'Select and the Cole & Mason Derwent each lock into six preset grinds. Pick a setting once and every turn matches it.
  • Slides, knobs and stepless adjusters. OXO gives the Contoured five settings on a slide tab, and ThermoMaven has six fixed levels. Home EC uses a knob at the top and CIRCLE JOY a stepless adjuster: quick to change, but harder to set the same way twice.

Which grind for what? Fine pepper disappears into sauces, dressings and eggs. Coarse, cracked pepper sits on top of a steak or a salad, where you taste it as separate bites. If you cook a bit of both, a mill with clear settings saves you guessing.

OXO Good Grips Contoured Mess-Free Pepper Grinder with a clear body and a stainless steel top

Best for most kitchens

OXO Good Grips Contoured Mess-Free Pepper Grinder

Good for: a first real pepper mill, and anyone tired of pepper rings on the shelf.

Why we picked it: OXO pairs a non-corrosive ceramic grinder with five grind settings on a slide tab. It grinds and serves from the top, so the grinder faces up when stored, and an airtight lid keeps the peppercorns dry.

What to know: The clear BPA-free body shows you when it is running low. It comes filled with black peppercorns. OXO sells a matching salt grinder separately.

The drawback: the body that holds your pepper is acrylic, not glass, and OXO says hand wash only. OXO does not list a capacity, so if you go through a lot of pepper, check the size first.

Refill mess: where the pepper ends up

Most pepper mills grind from the bottom. Every time you set one down, a little dust falls out, and after a month there is a ring of pepper on the shelf. Top-grind mills like the OXO flip that around: the grinder faces up between uses, which keeps stray grounds off the shelf.

The second mess is refilling. On the Peugeot you remove the knob and the head to pour in more peppercorns. On the Derwent you take off the top cap, and Cole & Mason suggests using a funnel. Glass and acrylic bodies let you see the level, so you can refill before it runs out.

How to refill a pepper grinder

  1. Turn it over a plate or the sink. Give it a few turns so loose dust drops out of the mechanism.
  2. Open the mill the way the maker says: knob and head on a Peugeot, top cap on a Derwent; on the Home EC, unscrew the grinder from the bottle.
  3. Set a small funnel in the opening and pour in whole, dry peppercorns. Stop about 1/2 inch (1 cm) below the top.
  4. Close it, then grind a few turns over the plate before you season food.

Cole & Mason Derwent pepper mill with a clear acrylic body and stainless steel top and base

Clear steel-mechanism pick

Cole & Mason Derwent 7.5-inch Pepper Mill

Good for: someone who wants a steel mechanism and wants to see the pepper level.

Why we picked it: Cole & Mason fits the Derwent with its carbon steel Precision mechanism and six preset grind levels. The mechanism has a lifetime guarantee, and the mill has a two-year warranty.

What to know: It stands 7.5 inches (19 cm) tall in acrylic and stainless steel. Cole & Mason sells a Derwent salt mill with a ceramic mechanism for salt.

The drawback: carbon steel is for pepper only. The body is acrylic, not glass. And the mechanism must not be rinsed or soaked, so you clean the outside with a damp cloth and dry it.

See the Derwent on Amazon

Salt and pepper grinder sets

Salt and pepper need different mechanisms. Pepper is dry and oily. Salt pulls moisture out of the air and rusts metal. So a set has two safe layouts: ceramic in both mills, or steel for pepper and ceramic for salt, which is how Cole & Mason pairs its Derwents.

Before you mix them up at the table, mark which is which. A ceramic pepper mill can take salt, but salt left in a steel pepper mill is how a good mechanism gets ruined.

Want one mill you can fill with anything? The Kuhn Rikon Ratchet Grinder has a ceramic grinding stone that Kuhn Rikon says is not subject to rusting, and it is sold for salt, pepper and spices. Wipe it or wash it by hand; it is not dishwasher safe.

Home EC stainless steel and glass salt and pepper grinder set, two tall mills

Set pick

Home EC Stainless Steel and Glass Salt and Pepper Grinder Set

Good for: a matched pair with a ceramic mechanism in both mills.

Why we picked it: Both mills use a heavy-duty, non-corrosive ceramic grinder, so either one can take salt or pepper. The bodies are 304 stainless steel and glass.

What to know: The glass bottle is BPA-free and can be washed on its own. Each grind is adjustable.

The drawback: Home EC says the grinding mechanism must never get wet, so you cannot rinse the head. Glass can break if it falls off the counter.

See the Home EC set on Amazon

Electric pepper grinders: gravity or push-button, batteries or USB

An electric pepper grinder turns the mechanism with a small motor, so you season with one hand. A gravity grinder starts when you tip it upside down and stops when you set it upright. A push-button grinder runs while you press the top.

Power is the other choice. Battery mills take AA or AAA cells, which you will replace. Rechargeable mills charge by USB. Either way, the motor sits near the grinder, and that changes how you clean it.

CIRCLE JOY gravity electric salt and pepper grinder set, two mills with clear windows

One hand free

CIRCLE JOY Gravity Electric Salt and Pepper Grinder Set

Good for: seasoning at the stove while the other hand stirs.

Why we picked it: Turn either mill over and it grinds; set it back and it stops. Both mills use a ceramic grinding core, and a light shows where the pepper is landing.

What to know: The listing says the container and ceramic core are washable, which is unusual in this list. Our advice: keep the motor and battery end dry.

The drawback: the pair runs on eight AAA batteries, four per mill, and the listing does not say what the body is made of. Tilting is what starts it, so store it upright.

See the CIRCLE JOY on Amazon

Prefer charging to batteries? The ThermoMaven rechargeable set charges by USB-C and has an ABS and stainless body. One warning: its listing calls the grinder high-hardness ceramic in one place and stainless steel in another. We could not tell which is right, so ask the seller before you put salt in it.

How to clean a pepper mill without ruining it

The makers' rules differ, so follow your own mill's manual. Here is what each says:

  • Peugeot: a soft, dry cloth for the outside and a soft brush for the gears, worked from outside the mill. No detergent, no sink, no dishwasher, no humidity.
  • Cole & Mason: wipe with a damp cloth and dry it well. The mechanism must not be rinsed or soaked.
  • Home EC: the glass base can be washed. The grinding mechanism must never get wet.
  • OXO: hand wash only.
  • Kuhn Rikon: wipe clean or wash by hand. Not dishwasher safe.
  • CIRCLE JOY and ThermoMaven: both listings say the parts that touch the spice are washable. Our advice: keep the motor and battery end dry.

Keep every grinding mechanism out of the dishwasher. Home EC is the only maker here that mentions a dishwasher at all, and only for the glass bottle. If one is clogged, empty it, brush the mechanism dry and refill with dry peppercorns. Our list of things to keep out of the dishwasher covers other kitchen tools.

What we left out, and why

  • Multipacks of cheap plastic grinders. The listings rarely say what the grinding part is made of.
  • Premium mills at several times the cost of our picks, such as the Mannkitchen Pepper Cannon and the HexClad HexMill. They may be excellent, but this guide sticks to everyday prices.
  • Mills we could not match to a maker page for mechanism and care, including the Unicorn Magnum and pod-style grinders.

Questions people ask

Is a pepper mill the same as a pepper grinder?

Yes. Makers and shops use both names for the same tool. "Mill" tends to mean the tall manual kind, and "grinder" is used for everything, electric models included.

Are pepper mills worth it, or is pre-ground pepper fine?

Pre-ground pepper works, but it loses aroma faster because the oils are exposed from the day it is ground. Whole peppercorns in a mill keep it until you turn the top. If you only use pepper now and then, a modest mill like the OXO is enough.

Which pepper mill is best for home use?

For most homes, a manual mill with an adjustable ceramic mechanism and a clear body, such as the OXO Good Grips Contoured. Choose the Peugeot u'Select if it will only ever hold pepper, and an electric gravity set if you want one hand free.

Can you put salt in a pepper grinder?

Only if the mechanism is ceramic. Salt corrodes steel: Cole & Mason gives its salt mills ceramic mechanisms, and Peugeot excludes salt in a pepper mill from its warranty. Don't put salt in a steel or carbon steel pepper mill.

What peppercorns should go in a grinder?

Dry, hard, whole peppercorns. Peugeot says to keep them 1/4 inch (6 mm) or smaller and lists black, white and dry green. Peugeot allows pink peppercorns only as up to 15% of a blend.

Can you grind coffee in a pepper grinder?

It is a bad idea. Most coffee beans are bigger than the 1/4-inch (6 mm) limit Peugeot gives for its pepper mills, and coffee oils would flavor the next batch of pepper. Use a coffee grinder.

What about other spices?

Peugeot says dried coriander seed is fine in its pepper mechanism, and Kuhn Rikon sells its ratchet grinder for spices too. For seeds and blends, a mortar and pestle handles far more than a mill can.

Do big restaurant-style mills grind better?

A taller mill mostly holds more. The mechanism decides the grind, so a short mill with a good ceramic or steel mechanism can match a tall one.

Once your pepper is sorted, a spice rack keeps the rest of the jars in reach. For more counter tools, see our picks for cheese graters, can openers and whisks, and our guide to cookware accessories.

How we put this together

On 5 Nov 2026 we confirmed each pick was in stock on Amazon US and noted who sells it. We then read the maker's product page or FAQ for Peugeot, Cole & Mason and OXO, plus the maker's text on every pick's Amazon listing, which is the only source for Home EC, CIRCLE JOY, Kuhn Rikon and ThermoMaven. Where a care tip is ours, not the maker's, we say so. Every material, setting and care rule is the maker's, not ours, and no brand saw this page before it went up. Where a listing contradicts itself, as ThermoMaven's does, we say so.
